Beignets

Rachael is quite the cook. She really wanted to make beignets like they did in Disney's The Princess and the Frog. They turned out fantastic.

1 pkg dry yeast (1 TB)
1/2 c. warm water
1/2 c. evaporated milk
1 egg (beaten)
1 tsp. vanilla
2 TB vegetable oil
1/4 c. sugar
1 tsp. salt
3 c. flour
OIL heated to 370
powdered sugar to dust with

Dissolve yeast in warm water. Mix milk, egg, vanilla, oil, sugar and salt. Add in yeast mixture. Stir in flour. Take 1/9 of dough and put into hot oil till browned. Dust with powdered sugar.

Chili

I was at Jenna's for the weekend. Robert made some delicious chili which went well with the snowy weather. I had never tried some of the techniques they used, so I thought I would put this recipe down for our posterity.

Chili
6 cans beans (different varieties)
2 cans tomotoes
2 cans corn
1 lb. italian sausage
1/2 cup non-diet soda
1/2 cup brown sugar
chili powder
garlic salt
jalapenos (optional)
Cook sausage. Throw everything in the crockpot for 6 hours on low.

Sour cream salsa chicken

I have made many variations of this dish. However, this one has very few ingredients which goes along with my simplifying theme.

INGREDIENTS

4 skinless boneless chicken breast halves
1 package reduced-sodium taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream
DIRECTIONS

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours. When ready to serve, remove the chicken from the pot. Place about 2 T cornstarch in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 cup of light sour cream.
